Song Dynasty Powdered Tea Ceremony, Contemporary Whisked Tea Ceremony

The so-called "Whisked Tea" refers to a tea preparation method where tea cakes are first roasted and ground into powder. The tea powder is then placed in a chawan, and a small amount of hot water is added to create a paste. Afterward, hot water is slowly poured into the chawan, while simultaneously using a chasen (bamboo whisk) to whisk and create froth. The goal is to achieve a tea foam, and it is considered ideal when no watermarks are left on the edge of the chawan.

Whisked tea was the primary way of tea consumption during the Song Dynasty and later evolved into the Japanese matcha ceremony, known as the "Way of Tea" (抹茶道). During the Song Dynasty, Chinese tea drinking underwent changes, and the Whisked Tea method became a fashionable way of preparing and enjoying tea.
